Hi there, my name is Kim Raring and I am the founder of Conscious Nibbling. I am here to spread the word about how to create a conscious lifestyle by adding in whole plant-based foods, earth-friendly strategies, and mindful eating practices. Conscious Nibbling is about taking tiny steps that lead to balance in your well-being.

I have worked in the nutrition field for over 30 years as a dietitian/nutritionist and personally have tried a multitude of eating lifestyles only to realize I was unaware of the negative impact of my food choices, even though I thought they were “healthy”.

10 years ago, I came across the documentary “Forks Over Knives” and it changed my whole perspective on food. Instead of eating food based on parts, such as protein, fat, carbohydrates, calcium, and fiber, I think of food as medicine and take notice of how I felt physically and mentally after eating.

For example, when I ate cheese, I felt tired and was congested the next day. When I ate processed cookies, I felt sad and lazy. When I ate homemade oatmeal with diced apples. I felt calm and nourished and so forth.

Since becoming more conscious of the food, physical and mental connection, I have experienced more energy, a happier mood, better sleep, and improved ability to focus. It is my intention with this blog to inspire you to start consciously nibbling and experience how day to day choices impact your well-being.

In addition, to increasing awareness of conscious nibbling with plant-based foods, I am here to empower you to be earth-friendly in everyday choices with food, kitchen and household items, and also become more mindful about your eating practices.

Once you begin implementing conscious nibbling strategies and experience amazing vitality, I am sure you too will find the rippling effects truly life-transforming.

Kim is a Registered Dietitian Nutritionist with a Master of Science degree in Nutrition and Applied Physiology. She attended undergraduate school at the University of Delaware and Teachers College at Columbia University for graduate school.

She is the owner of Nutrition Consults, which provides nutrition consulting services. In addition, she is an adjunct faculty instructor at Stockton University in Galloway, New Jersey where she teaches a course on “Real Food” educating college students on plant-based nutrition.
