This super easy black bean and corn salsa recipe is one of my favorite summer recipes. My sister would often bring it to family gatherings and everyone loved it. So simple to make and chock full of nutrients, fiber, protein, antioxidants, and flavor. Perfect to bring for a family or friend gathering. Paired with baked tortilla chips, it is a perfect plant-based meal or side dish.

  • Black beans: protein, fiber, calcium, promotes healthy gut bacteria
  • Corn: fiber, protein, complex carbohydrates, vitamin C
  • Red pepper: anti-oxidant lycopene, vitamin C, fiber, protein
  • Cilantro: rich in phytonutrients, flavonoids, adds cooling flavor

Ideally, I recommend all ingredients organic, however, organic may not be available or cost may be an issue. In this case, I specifically recommend organic for some of the ingredients. Why are some ingredients organic? Corn is often genetically modified, unless organic. Red peppers and cherry tomatoes are both on the “Dirty Dozen” list of produce high in pesticides and therefore organic is recommended. Check out my blog article on pesticides in produce.

Black Bean & Corn Salsa

Easy and nutritious black bean and corn salsa recipe.

  • Large mixing bowl
  • Baking sheet


  • 1 1/2 cups black beans
  • 1 1/2 cups organic corn
  • 1/2 cup organic red pepper chopped
  • 1/2 cup organic tomatoes diced
  • 1/8-1/4 cup red onion chopped fine
  • 1/4 cup cilantro finely chopped
  • 2 tbsp fresh-squeezed lime juice
  • salt & pepper to taste
  • 12 corn tortillas


  • In a large mixing bowl, add corn, black beans, tomatoes, red pepper, red onion. Gently mix
  • Add the lime juice and toss gently
  • Add cilantro, salt and pepper to taste
  • Cut each corn tortilla in 4.
  • Place corn tortillas on large baking sheer with parchment paper
  • Bake tortillas at 350 degrees Farenheit for 4-8 munutes, until desired crispness, toss mid-wat



  • Add chunks of fresh avocado or serve with guacamole
  • Add peas and/or shelled edamame
  • Add diced organic green pepper
  • Add 1/2 teaspoon cumin for a Mexican kick
  • Add lemon juice for more citrus flavoring


  • SALAD: Top arugula or spinach with the salsa
  • WRAP: Add the salsa with mixed greens on a corn or whole-grain wrap
