  • Large mixing bowl
  • Baking sheet


  • 1 1/2 cups black beans
  • 1 1/2 cups organic corn
  • 1/2 cup organic red pepper chopped
  • 1/2 cup organic tomatoes diced
  • 1/4 cup red onion chopped fine
  • 1/4 cup cilantro finely chopped
  • 2 tbsp fresh-squeezed lime juice
  • salt & pepper to taste
  • 12 corn tortillas


  • In a large mixing bowl, add corn, black beans, tomatoes, red pepper, red onion. Gently mix
  • Add the lime juice and toss gently
  • Add cilantro, salt and pepper to taste
  • Cut each corn tortilla in 4.
  • Place corn tortillas on large baking sheer with parchment paper
  • Bake tortillas at 350 degrees Farenheit for 4-8 munutes, until desired crispness, toss mid-wat



  • Add chunks of fresh avocado or serve with guacamole
  • Add peas and/or shelled edamame
  • Add diced organic green pepper
  • Add 1/2 teaspoon cumin for a Mexican kick
  • Add lemon juice for more citrus flavoring


  • SALAD: Top arugula or spinach with the salsa
  • WRAP: Add the salsa with mixed greens on a corn or whole-grain wrap
